Mango Lemon Cheesecake Recipe

For my birthday I came up with this Mango Lemon Cheesecake and it turned out too good not to share the recipe with you! I wanted this cake to be simple, so I used this lemon snack recipe for the base. For the cheesecake layer I took a simple vegan cashew nut topping and adjusted it by mixing in an entire fresh mango. The blueberries on top are just for decoration; you could add any fruit to your liking or…

Recipe lemon almond balls

Yesterday I shared the chocolate balls recipe I came up with last week, and today when the kids were sleeping I managed to make and photograph the lemon almond version. This is what I quickly become to love about food recipes as apposed to crochet and knitting patterns; they are so quick! What an eye opener, haha. But, let’s get to it. The recipe. When you compare this recipe to the chocolate one, there’s lots of similarities. The basic difference…

Recipe for vegan chocolate treats

Chocolate has always been one of my biggest food-loves. Or treat-loves I should say. When I know there’s chocolate in the house, I guarantee you it won’t last long. So when I changed my lifestyle and decided to cut out refined sugars, there was a slight problem. Now there’s the 90% chocolates of course, and I do love those, even buy them regularly. But, the best way for me to contain myself when it comes to snacking, is when I…

Chocolate snack with mixed nuts

Being diabetic Type 1 and aiming for a healthy lifestyle, it took me a couple of months to find out what worked for me regarding breakfast and lunch; read more about the latter in this post. But picking the right snacks is still something I am working on. Of course there is fruit and crackers, but together with my tea or latte I prefer something chocolate or sweet. Usually that comes with lots of sugars; sugars I have to give…

First Birthday Daycare Treats

Welcome to the jungle! Hugo turned one on Saturday and I thought I’d share with you the non-food treats I made for his friends at daycare. Hugo is in a group with babies age 3 months to 2 years, which makes it hard to put together something age appropriate for all of them. I went with jungle animals and a balloon, so the parents can decide what and when to give to their baby. We gave the teachers a bag…

Advent Calendar in progress

After seeing this beautiful and stylish Advent calendar at Minke’s Instagram account, I knew I would be making one for my own kids one day. And when she posted this year’s version, I simply couldn’t hold myself back anymore. So I took what I found suitable yarns from my stash and started crocheting. Minke was very enthusiastic right away and we chatted away about the details. Since she has no blog, we will be using my blog to share the…
